
Squash Bubble and Squeak

Incredibly good Bubble and Squeak variant using Mashed Squash along with other vegetables
Perhaps counter-intuitively using squash instead of potato works a treat, and this can be used as an accompanyment to all sorts of dishes.

Remove the seeds from the squash and discard, cut the skin off the squash and cut into cubes. Simmer the squash in salted boiling water until only barely tender which will take from five to ten minutes. Drain the squash and put back into the saucepan with one tablespoonful of olive oil. Very lightly mash with a potato masher and season with salt and pepper.
Roughly chop the carrots and broccoli or similar and individually season well with salt and pepper. Stir into the squash. You can put this to one side now for as long as you want.
You can either cook the bubble and squeak traditionally under a plate or put into cylindrical cooking moulds. In either case put a little olive oil into a frying pan over a medium heat. Either put the mixture into the frying pan and cover with a plate or put into moulds and then put them into to frying pan. Cook until nicely hot and brown on the pan side and then serve.
