Baked Monkfish with Harissa and Spicy Lentils

Baked Monkfish annointed with a hot Harissa served on Lentils flavoured with Cumin and Coriander works really well!

  1. Make the harissa  Recipe   and put to one side
  2. Cut the monkfish off the bone and trim. Cut the fish into approximately fish finger sized pieces! Pain the the pieces all over with olive oil, season with salt and fresh black pepper and lemon juice. Use a pastry brush to liberally paint the upper side of the pieces with harissa  Picture  . Smear an ovenproof dish with olive oil and put in the fish pieces.
  3. Peel and chop an onion and soften in a tablespoonful of olive oil over a low heat. Stir in two teaspoonfuls each of ground cumin and ground coriander to the onions and continue to cook for a few minutes. Stir in the lentils and add the stock. Simmer for around 20 minutes or so until soft adding more water if necessary.
  4. About ten minutes to go put the fish into the oven at 375°F/190°C/Reg5 and cook for around 8 minutes.
  5. Use a slotted spoon to put the lentils on to serving dishes along with a little of the serving liquor, put a couple of fish pieces on top and serve immediately  Zoom  .
