
Broad Beans

Broad beans peeled and served with a little cream and some lemon thyme
quite a lot of broad bean pods, enough to deliver 1½ to 2 handfuls of beans per person
Pod the beans and cook in salted boiling water for no longer than ten minutes. Drain in a colinder and put under cold water.
Peel each broad bean and put in a fresh saucepan
Add the cream, lemon thyme and salt and pepper to taste. Re-heat when required. Don't simmer otherwise the lemon thyme taste will loose its lemony flavour.
