Potato Purée

old potatoes, preferably King Edwards, enough for one to two tablespoonfuls per person
- Boil the peeled potatoes until just tender
- Drain and roughly chop the potatoes. Add the crushed garlic, butter and a couple of tablespoonfuls of cream. Mash/cream with a fork.
- Add enough additional cream to make a good purée and season to taste with salt and pepper.
