Pork Fillet with Leeks and Gruyère

Great dish with sauteed Pork Fillet medaillons with a red wine glaze served with Leeks with a Gruyère Sauce and some Sauteed Courgettes

  1. Start the leeks and gruyère sauce  Recipe  . Trim the pork fillet if necessary, cut into 1 cm slices on the bias, and season well with salt and fresh black pepper.
  2. If used, cut the courgettes into half lengthwise, use a teaspoon to remove the pith, cut the courgetes into thinish slices and season with salt and pepper. Put into an ovenproof dish with a tablespoonful of olive oil and saute over a medium heat turning from time to time  Picture  . When ready keep warm in the oven.
  3. Quickly saute the pork slices until just brown but not overcooked. Take the pork out of the dish and keep warm. Pour a glass of red wine into the cooking dish, reduce over a high heat and add three tablespoonfuls or so of pork stock. Take off the heat and stir in well a tablespoonful of cornflour.
  4. Put a portion of leeks and courgettes on to serving plates followed by some pork slices and then spoon over some red wine sauce  Zoom  .
Serves: Two to three

Serve with: Leeks with a Gruyère Sauce  Recipe
