This is more or less Delia Smith's recipe for quick flaky pastry which works a treat


250 gm plain flour

  1. Put the butter into the freezer for at least an hour. Sieve the flour into a bowl along with a good pinch of salt.
  2. When ready, grate the butter into the flour making sure you do not include any of the wrapping paper. Then says mix the mixture with a palette knife (Delia says not your hands and who I am to argue) until the mixture is crumbly. I used a mixer the second time to mix the butter and flour and I think it worked better.
  3. Add a little cold water until you can form the mixture into a ball with your hands. Put the ball in some greaseproof paper and put in the fridge for about 30 minutes. Then roll out and use as required.
