
Aubergines and Courgettes

Nice combination of griddled Aubergines and Courgettes, with Shallots, Garlic and Coriander
This goes great with the Moroccan Lamb but also with lots other dishes, spice it up with some cumin, coriander, chilli if it makes sense
Top and tail courgettes and aubergines into slices, cut aubergine slices in half where necessary, put on a plate, paint with olive oil and season with salt and pepper on both sides.
Peel the shallots and cut into thinish slices. Peel and finely chop the garlic. Put the shallots into an ovenproof dish, along with a tablespoon or so of olive oil and soften but do not brown over a medium heat. When almost ready stir in the garlic. Put to one side.
Very lightly paint a griddle pan with oil using a brush. Put over a hot heat and when ready griddle the courgettes and aubergines on both sides. As they become ready add to the onion/garlic dish. When they are already, stir and put in an oven at 350°F/180°C/Reg4 for five to ten minutes stirring occasionally.
When ready to serve, check seasoning, chop fresh coriander and sprinkle over a couple of tablespoonfuls.
