Mango and Chilli Dressing

Peel the mango and cut off the flesh discarding the hard core. Roughly chop the mango and put in a blender. Slice the three chillis in half, discard the seeds, cut into thin dice and add to the blender. Peel the garlic clove, chop into thin dice and add to the blender.

Slowly blend the mixture until eventually it will transform to a thick liquid. Take off four tablespooonfuls of the mango mixture and put into a bowl, add one tablespoonful of olive oil and one tablespoonful of lemon juice. Use a fork to beat the mixture into a dressing. Season with salt and additional lemon juice as required. Keep in the fridge if need be.
