For the olive oil enthusiast, pork chops cooked in lots of olive oil with lemon and garlic.

Trim all the rind and fat of the pork chops. Season with salt and pepper. Peel and cut the garlic cloves into thick slices. Cut the lemon into slices and separate the rind from the lemon and cut into quarters.
Prepare the crushed potatoes Recipe , and the griddled courgettes Recipe .
Put a couple of teaspoonfuls of olive oil into a thick bottomed pan and put over a high heat. When hot put in the chops and sear on both sides for a few minutes.
Reduce to a low heat, and pour in olive oil to about half the thickness of the chops. Add and stir in the garlic and lemon pieces. Cook for around 15 minutes turning from time to time until the chops are cooked (test with a knife) Picture .
When cooked, serve the chops and pour over the olive oil and garlic and lemon Zoom
