Spit Roasted Quail with Green Beans and Potatoes

Lovely Quail spit roasted with Green Beans and Lardons and great Potatoes with Red Peppers and Spring Onions - as good as it looks!

  1. Top and tail the green beans and put in a saucepan of water. Cut the bacon into lardons. Prepare the potatoes with peppers and onions up until the point of putting in the oven  Recipe  .
  2. Put some fresh rosemary into the cavities of the quail, thread them on to a spit and tie them around the body and wings with some string. Paint with some olive oil and season with salt and pepper. Start up the barbecue under the spit.
  3. Start cooking the potatoes  Recipe  , simmer the green beans in salted water until barely tender and then drain. Quickly fry the bacon in a little bit of oil to make lardons. Put the quail on the spit and cook until golden and tender which will probably take 30 to 40 minutes.
  4. When ready stir the lardons into the beans and quickly warm through. Cut the quail into halves discarding the carcasses. Put the beans on to serving dishes, put the quail on top, surround with some of the potatoes and serve  Zoom  .
