
Oven cooked Baby Parsnips with Basil

Terrific dish but you need to get some baby Parsnips
Top and tail the parsnips, lightly scrape, cut into two lengthwise and season with salt and black pepper. Put into an ovenproof dish, sprinkle over a tablespoonful of olive oil and cook in the oven at 375°F/190°C/Reg5 for 15 minutes or until just barely tender.
Meanwhile chop up the basil. When ready, take the parsnips out of the oven, sprinkle with basil and serve.
