Parsnip and Sausage Sauté

The Parsnips, Onions and Sausages work very well together, a really nice dish from H F-S.

  1. Clean/scrape the parsnips, cut into halves, cut the thicker half into four lengthwise and the other half into two lengthwise and put into an oven proof dish. Peel and cut the onion into quarters and add to the parsnips. Strip the fresh thyme to deliver a tablspoonful of leaves, chop and add to the dish. Sprinkle over a couple of tablespooonfuls of olive oil and a few pinches of salt, cover with foil and cook in the oven at 400°F/200°C/Reg6 for about 30 minutes.
  2. When ready uncover the parsnip mixture, cut the sausages into half and add to the mixture. Return to the oven and cook for about 30 minutes or so turning the sausages over half way through until the sausages are brown and the vegetables nicely golden. When ready, garnish with some chopped parsley and serve  Zoom  .
