Pork Escalope with Broccoli and a Colston Bassett Sauce

Nice comforting dish with a Colston Bassett (or in truth any nice blue cheese) Sauce with Broccoli Shoots and pan fried Pork Escalopes

  1. Chop up the cheese into small pieces. Put the cream in a saucepan over a medium heat and heat until hot but barely bubbling. Take off the heat and stir in the cheese until it tastes good but not too strong. Season with salt and pepper and keep on one side.
  2. Trim the escalopes if necessary and season with salt and fresh black pepper.
  3. Trim the broccoli and preferably steam until tender.
  4. Meanwhile, put a couple of tablespoonfuls of olive oil into a heavy bottomed frying pan over a high heat. Put in the escalopes and brown quickly for a couple of minutes per side. Turn the heat right down and finish off until tender. During this put on the sauce to rewarm.
  5. When ready, put the escalopes on to serving plates, add the broccoli and spoon over some sauce and serve  Zoom  . This is quite nice.
