Make the Sauce Basquaise Recipe and when ready put to one side.
Meanwhile, clean and chop the potatoes into around 1cm cubes. Sprinkle olive oil over the potatoes and season them well with salt and fresh black pepper and put into an ovenproof dish. Cook in the oven at 400°F/200°C/Reg6 turning from time to time until nicely golden. Then take out and keep warm.
Meanwhile wash and dry the sea bream fillets, paint with olive oil, season with some lemon juice, salt and black pepper. Put a little olive oil in a good non-stick pan over a fairly high heat. Put the fillets skin side down in the pan and cook for three or four minutes, turn and cook for a minute or so.
Re-heat the Sauce Basquaise and spoon some over the serving plates, put on top the sea bream fillets followed by a little more sauce. Spoon around some potatoes and serve Zoom .
