Barbecued Lamb Cutlets with Sauce Bernaise

Barbecued Lamb Cutlets served with Bearnaise Sauce, Courgettes and Oven Baked Mushrooms.

  1. Cut all the fat off the back of the lamb joints. Cut into cutlets and season with salt and fresh pepper. Put the cutlets onto barbecue skewers.
  2. Paint the cutlets with olive oil and cook on the barbecue at a good distance from the heat, turning from time to time until just cooked (test with a sharp pointed knife)  Picture    Picture  
  3. Meanwhile prepare the courgettes  Recipe  , and the mushrooms  Recipe  .
  4. Prepare the Bearnaise Sauce  Recipe   and keep warm.
  5. Serve the cutlets and vegetables, and pour over a little Bearnaise Sauce  Zoom  .
Serves: Three
