Courgettes cooked in Oil with Basil

Wash the courgettes and trim the ends. Cut into slices on the bias about a centimetre thick. Season with salt and pepper.

Heat olive oil and butter in a thick bottomed saucepan to a ½inch/centemetre depth. Put in courgettes and cook stirring until the courgettes are softer but still quite crisp.

Put some kitchen paper on the serving dish, Take the courgette slices out with a slotted spoon and put on the paper, toss to remove the oil and discard the paper. Add the chopped fresh basil and distribute over the courgettes.
