Rare Spit Roasted Sirloin of Beef simply served with Potatoes Dauphinoise and some Rocket - difficult to beat


around 2 Kg Sirloin of Beef tied and barded by your butcher

  1. Make the Potatoes Dauphinoise  Recipe   and put into the oven.
  2. Start fire under the spit roast. Feed the sirloin on to the spit securing with two clamps  Picture  , and season all over with salt and pepper.
  3. When the charcoal is ready put the beef on to cook  Picture  . For good rare beef cook for approximately 1¼ hours, but check using a carving fork or a meat thermometer at say 45°C. When ready  Picture  , remove from the spit and loosely cover with foil and let rest for ten minutes or so.
  4. Make a mild dressing say 7 to 1 olive oil to lemon juice with a little salt and lightly dress the rocket. Cut the beef into thick slices removing the barding fat and serve with the potatoes and rocket  Zoom  .
Serves: Four to six
