Barbecued Prawns and Monkfish

Prawns and Monkfish put on skewers and cooked on a barbecue served with a Lemon and Parsley Risotto and steamed Samphire

  1. Cut the central spine out of the monkfish and remove the outer skin if necessary. Cut into 1 inch/3 centimetre squareish chunks.
  2. Feed the prawns and monkfish alternatively onto skewers. Paint with olive oil, lightly season with salt and pepper and fresh lemon juice  Picture  .
  3. Barbecue not too near to the heat turning from time to time until the monkfish is just cooked - probably about ten minutes or so  Picture  .
  4. Meanwhile prepare the Parsley and Lemon Risotto  Recipe   and Steamed Samphire  Recipe  .
  5. When ready, serve the risotto followed by the skewers and samphire  Zoom  .
Serves: Two
