Spaghetti Carbonara

Lovely dish of Spaghetti, Bacon lardons, Eggs and Parmesan Cheese

These quantities are better served as a supper dish rather than as a primo in an Italian meal.

200gm spaghetti

  1. Cut bacon into lardons, put in a frying pan with a smear of olive oil, brown over a medium heat and then take out of the pan and put to one side. Break the eggs into a bowl, add one pinch of salt per egg and a good turn of fresh black pepper. Beat the eggs well and stir in the grated parmesan.
  2. Put on some water to boil and when ready add the spaghetti, cook until just cooked for around ten minutes. When ready drain well in a colinder, re-add to the saucepan and season with a little salt. Add the egg mixture to the spaghetti and stir well until just cooked for no more than two minutes.
  3. Serve the spaghetti in warm bowls with a extra parmesan and a grater  Zoom  .
