Pork Escalopes in a Red Wine Jus with a Cauliflower Gratin

four or so slices of pork fillet

  1. Prepare the cauliflower gratin  Recipe  , and a green vegetable.
  2. Meanwhile trim the slices of pork fillet removing any fat, flatten a little with a rolling pin, cut into strips  Picture   and season well with salt and pepper. Quickly brown the pork over a medium heat on both sides in a little olive oil and take out and keep warm.
  3. Put the pork pan back over a high heat, add some pieces of fresh rosemary and two glasses of red wine and reduce scraping the bottom of the pan.
  4. Spoon some cauliflower on to serving plates, followed by the pork strips and some green vegetable. Spoon the reduced red wine over the pork and serve.
Serves: Four
