
Roasted Baby Potatoes

Very easy way to cook potatoes that goes with all sorts of dishes
Small new potatoes, preferably waxy like charlottes
Clean the potatoes and cut into half. Dry the potatoes with some kitchen paper, season with salt and fresh black pepper and put into an ovenproof dish. Add a tablespoonful of butter and then add olive oil until three quarters covered. Put into a pre-heated oven at 375°F/190°C/Reg5.
Cook for a half hour or so turning a couple of times until tender and golden brown. Put some kitchen paper over a warm serving dish, add the potatoes to remove any fat, remove the paper and serve.
