Spaghetti with Sirloin Steak

Yummy dish of Sauteed Strips of Sirloin Steak with Spaghetti and a nice Chilli Sauce

  1. Start off by making a nice tomato sauce. Put the tomatoes into a bowl of boiling water, take out one by one on to a chopping board, discard the skin, cut into quarters , discard the seeds and transfer to a small saucepan. Drain the juice etc. from the chopping board through a sieve into the saucepan.
  2. Top and tail two chillis, cut in half lengthwise, remove and discard the seeds, and chop into small pieces. Top and tail two garlic cloves, peel and crush. Add the chillis, smoke paprika, garlic and a tablespoonful of olive oil to the tomatoes. Simmer and mash the tomato mixture until it is a nice chunky sauce. Season with a little salt and put to one side.
  3. Trim the sirloin steaks of all fat and any gristle. Cut into thin slices, lay out on a chopping board, paint with a a little olive oil and season with salt and pepper on both sides.
  4. Put the spaghetti on to cook over a medium heat. Meanwhile quickly cook the steak pieces in a tablespoonful of olive oil on both sides, stir in three tablespoonfuls of double cream. Rewarm the tomato sauce.
  5. Drain the spaghetti, put back in the saucepan, season with a little salt, stir in the tomato sauce followed by the steak pieces and cream.
  6. Spoon the spaghetti mixture on to serving plates, sprinkle over some chopped chives and some grated parmesan - serve with more parmesan on the side  Zoom  .
Serves: Two
