
Mutton Chops with Curly Kale, Crushed Garlic Potatoes and Onion Sauce

Great dish of Pan Fried Mutton Chops with a red wine reduction served with Curly Kale sauteed with Garlic and Shallots, Crushed Potatoes and Onion Sauce.
This was great and very much enhanced by the Onion Sauce that I hadn't had since my childhood
two mutton chops per serving

Trim the fat off the chops and lightly beat with a rolling pin or similar
Picture . Season well with salt and fresh black pepper. Prepare the Onion Sauce
Recipe and put to one side.
Scrape the potatoes and simmer in salted water until just cooked. Prepare the Curly Kale
Recipe and start cooking.
Pan fry the chops in a little olive oil over a medium heat for about three minutes per side, put the chops in another dish and keep warm in the oven. Pour a glass of red wine in the chop frying pan along with a small handful of thyme. Reduce to three of four tablespoonfuls over a high heat.
Meanwhile drain the new potatoes, add a couple of tablespoonfuls of butter and use a sharp knife to crush the potatoes. Season with salt and pepper and add a couple of crushed cloves of garlic. Combine well with a fork and re-season and add more garlic if needed.
Re-heat the onion sauce. Spoon some crushed potatoes and kale on to serving plates. Add some onion sauce to the side. Put the chops on top of the potatoes and kale and spoon over the reduced wine. Serve immediately
