Great Spit Roast of Leg of Mutton served with Chard, Oven baked Carrots with Basil, Greek Style Roast Potatoes and Onion Sauce

Again the Creamy Onion Sauce proves to be a lovely accompaniment to the tender Mutton

1.8 Kg Half Leg of Mutton

  1. Paint the leg of mutton with olive oil, season with salt and fresh pepper and thread on to the spit  Picture  .
  2. Scrape the potatoes and prepare the Greek style potatoes up to the point of putting in the oven  Recipe  , but use chopped fresh rosemary instead of oregano and only half a lemon.
  3. Scrape the carrots, cut into quarters lengthwise, put into an ovenproof dish, coat with olive oil and season with salt.
  4. Wash the chard leaves, trim off the stalks, cut the leaves lengthwise, cut into 2 cm slices and put into a steamer.
  5. Make the onion sauce  Recipe   and put to one side.
  6. Fire up the barbecue and when ready put the mutton on to roast over a medium heat  Picture    Picture  . Cook fairly slowly for about 2½ hours until done (if you like use a meat thermometer to check the meat is about 80°C. When ready, take off the spit, cover with foil and let rest for ten to fifteen minutes.
  7. Meanwhile, about an hour to go put the potatoes on to cook  Picture  . Thirty minutes to go add the carrots to the oven. Fifteen minutes to go start steaming the chard. Chop a handful of basil and add to the carrots when ready. Add a pinch of chilli flakes to a couple of handfuls of olive oil over a medium heat and finish off the chard  Picture  . Rewarm the onion sauce.
  8. When ready slice the mutton and put on to serving dishes, add the vegetables and onion sauce  Zoom   and serve.
