
Celeriac Puree

Celeriac boiled, shredded and enriched with cream.
one large or two small celeriacs
Peel the celeriac(s) and cut into smallish pieces. Put in a saucepan, cover with water, add a squeeze of lemon juice and some salt. Cook for about twenty minutes until tender.
Drain the celeriac and put through a Mouli Legume (don't blend as it makes it too fine). Add 1 or 2 tablespoonfuls of cream (no more) and season to taste with salt and pepper.
