Barbecued Pork with Pesto Stuffing

Very tasty dish of Pork Fillet filled with a Pesto Stuffing Barbecued and served with Barbecued Courgettes and Sauteed Potatoes

  1. Make the pesto  Recipe  , cut the crusts of the slice of bread make into breadcrumbs and stir into the pesto.
  2. Trim any fat and sinew off the fillets, and cut one long slit across each fillet making sure you don't want cut right through. Use a rolling pin or similar to very lightly batter out the fillets. Salt and pepper the fillets on each side, and spoon over the pesto on the cut sides  Picture  .
  3. Put one fillet on top of the other and tie with string  Picture   and paint all over with olive oil.
  4. Prepare whatever vegetables you are going to serve - I used barbecued courgettes and sauteed potatoes.
  5. Put the fillets on the barbecue and cook over a medium heat for about 45 minutes turning from time to time  Picture  . Check with a carving fork to see whether the pork is done otherwise cook for a further few minutes. Wrap in foil and let rest for five minutes.
  6. When ready cut to thick slices  Picture  , put on to serving plates along with vegetables, spoon over any scraps of pesto stuffing and serve  Zoom  .
Serves: 2 to 3

Notes: You could use a third fillet if you want a larger dish.
