Barbecued Rib of Beef

Terrific rare slices of Beef served with Potatoes cooked in Cream and Garlic, Oven Cooked Beetroots and some Watercress

  1. Make sure the rib is out of the fridge for at least an hour. Prepare the Potatoes with Cream and Garlic without any pancetta including boiling the potatoes etc.  Recipe  , and Foil Baked Potatoes  Recipe   with the smallest beetroots you can get  Picture  . Put barbecue on.
  2. Paste the rib with olive oil and season well with salt and fresh black pepper. As soon as the barbecue is ready put the rib on and cook for about 30 minutes turning every now and again  Picture  . Start cooking the potatoes and beetroots at the same time.
  3. When the rib is ready, wrap it in foil and let it rest for 15 minutes or so. Then take out of the foil, cut the meat away from the rib bone, and cut off the fat. Cut into thick slices across the rib. Put slices of beef on to serving plates along with some potatoes, beetroots and some watercress  Zoom  .
Serves: Two to three

Serve with: Potatoes with Cream and Garlic  Recipe   and Foil Baked Beetroots  Recipe  
Notes: Don't be disturbed that the beef is rare, that's exactly what it should be with this dish.
