Barbecued Duck with Blackberries

Barbecued Breast of Duck served on Potatoes and Peas and served with a great Blackberry Sauce

  1. Cut out the breast including wing bone from the ducks and trim off any excess fat  Picture  . Joint the remainder of the ducks and make a duck stock  Recipe  .
  2. Peel the potatoes, cut into cubes and blanch in boiling water for about five minutes. Pod peas and put into saucepan, barely cover with water and add tablespoonful of butter.
  3. Start up barbecue. Season the duck breasts with salt and pepper. When ready barbecue the duck breasts slowly for about 35 minutes using a skewer to check when juices run clear  Picture  . Cover with foil to rest for ten minutes or so.
  4. Meanwhile simmer the peas. Put a couple of tablespoonfuls of olive oil into a frying pan along with a tablespoonful of butter over a medium heat and saute the potato cubes until nicely brown. When ready drain the peas and mix with the potatoes  Picture   and keep warm.
  5. Heat up the stock, take off a few tablespoonfuls, mix in a level tablespoonful of flour and stir well, and add to the stock. Add the glass of Créme de Mûres, simmer for a while and then season the sauce with salt and pepper. Add a handful of blackberries.
  6. Spoon the potato/peas mixture on to serving plates, put a basrbecued breast on top, spoon over some sauce and serve  Zoom  .
