Peel tomatoes and discard pips and put in heavy bottomed saucepan.Peel and chop ginger root to give three tablespoonfuls and add to the saucepan with all other ingredients. Simmer and mash the mixture until quite smooth, take off heat and blend in a blender. Pour into container, allow to cool, then put in the fridge for at least a couple of hours.
Pour mixture into ice cream maker and make sorbet.
Notes: Tried on tomato salad with chopped basil and broad beans. Salad needs to be good sweet toms and sweet dressing.
