
Pan Fried Pork Chops

Great Pork Chops Pan Fried served with Steamed Broccoli and Saute Potatoes
Based on a TV programme by Raymond Blanc this really does deliver a simple but very tasty dish of pan fried pork chops served with its own jus.

Peel the potatoes and boil in salted water until tender, drain and cut into slices. Season with salt and pepper. Trim the broccoli shoots and put into a steamer.
Snip the rind of the chops a couple of times, lightly season with salt and fresh pepper. Put a couple tablespoonfuls of butter in a thick bottomed pan over a medium heat, add the chops and cook for four minutes per side adjusting the heat if necessary. Take out the pan, cover with foil and rest for around five minutes.
Pour half a wineglass of water into the pan juices over a medium heat and scrape the bits off the bottom of the pan. Roughly chop some sage leaves, add to the pan and then reduce. Take off the heat and put to one side.
Meanwhile saute the potatoes in some olive oil and a little butter. Stream the broccoli shoots until tender.
Put the chops on to serving plates, add the vegetables and por over the jus and serve
