
Carpaccio of Beef with Rocket and Olives

Raw slices of really good Beef Fillet with some well dressed Rocket makes a lovely starter
There are lots of suggested additions to this dish like slices of parmesan or salsa verde, but in my opinion a few black olives is perfect!

Cut the beef into four or so thin slices per serving using a slicing machine preferably
Picture or a very sharp knife. Season thoroughly with fresh black pepper and salt and put on to serving plates

Take some trouble making a nice dressing with five tablespoonfuls of olive oil to one tablespoonful of lemon and season. Toss the rocket with the dressing and put on top of the beef, add a few olives if used and serve

Serves: FourNotes: It's difficult to slice a small piece of beef fillet, so buy a bigger piece than required and use for a fillet steak recipe such as Recipe .
