
Tomatoes with Lovage and Berkswell Cheese

Flavoursome and pretty starter of really good Tomatoes dressed and served with chopped Lovage and scrapings of Berkswell Cheese
Select the tomatoes that are good and tasty and cut into thinnish slices. Make a dressing of seven tablespoonfuls of olive oil, one tablespoonful of white wine vinegar and a little salt to taste. Cover the tomatoes with the dressing and put to one side for an hour or so.
Roughly chop the herbs. Take the rind off the cheese and cut into thin scrapings.Cut the bread into slices, very lightly toast and roughly cut off the edges and put on to serving plates. Spoon over the tomato pieces, herbs and pieces of cheese.
Spoon over the dressing and serve

Serves: FourNotes: The trick for this dish is to buy more tomatoes than you need, then take small slices of each, taste them and don't use any that are not really tasty.
