Barbecued Pork with Dressed Mixed Leaves and Sauteed Potatoes

Loin, belly and spare ribs of pork slowly barbecued, served with saute potatoes and dressed leaves, I enjoyed this!

  1. Start the barbecue with enough charcoal to cook for at least an hour. All of the meat need to cook slowly, so if you can adjust the grill to around 10 inches/25 cms from the fire.
  2. Paint the loin with olive oil and season with salt and pepper and a squeeze of lemon juice if you like, and put on to the barbecue rind side down to cook for around an hour. Turn the joint from time to time.
  3. Around fifteen minutes later similarly oil and season the belly pork and put on the barbecue. Turn from time to time.
  4. Around fifteen minutes later do the same with the spare ribs to cook for about thirty minutes.  Picture  .
  5. Towards the end of the cooking period test that the pork joints are cooked and move to the edge of the barbecue if almost done. When done take the pork off the barbecue, cover with foil and allow to rest.
  6. Meanwhile, peel the potatoes and cook in salted boiling water. Drain and make some saute potatoes. Make a dressing and dress the leaves at the last minute.
  7. Cut the meat into slices and the rack into single ribs, serve along wityh the salad and potatoes  Zoom  . I enjoyed this!
