
Fat Chips

Dedicated to my children who for some reason like these. But also how to make chips without a chip pan (which I don't have).
largish floury potatoes like maris piper or king edward
Clean the potatoes by mildly scraping but do not peel. Cut into chips approximately ¾ inch/2 cm square. Season with salt and freshly ground white pepper.
Pour olive oil into an ovenproof pan so that the bottom is just covered. Add a tablespoonful or two of butter. Put in an oven at 425°F/210°C/Reg7 for five minutes or so.
If you have been keeping the potatoes in water, very thoroughly drain and dry before seasoning. Add the potatoes to the hot cooking pan and stir to coat in oil. Cook for around 30 minutes turning every now and again until the potatoes are golden brown.
Toss the potatoes in kitchen paper to remove excess fat before serving immediately.
