Halibut a la Plancha

Great dish of Halibut steaks and Mangetout cooked on the Plancha served with a Hollandaise Sauce and new Potatoes.

  1. Scrape potatoes, cook in boiling water until done, drain and keep warm. Meanwhile paint the halibut with olive oil on both sides, and season with salt and pepper. Put the mangetout in a bowl, add a couple of tablespoonfuls of olive oil and some salt and stir. Make Hollandaise Sauce and keep warm on the side.
  2. Light up the plancha on a low/medium heat. put the turbot steaks on and cook for about four minutes per side checking that fish is cooked with a pointed knife  Picture  . Take fish off griddle and keep warm. Put mangetout on plancha and cook for a few minutes so that they are still have a good bite stirring from time to time  Picture  . Meanwhile trim off the skin off the steaks and remove the bone. Keep warm.
  3. Put the mangetout on serving plates, add a couple of potatoes, lay fish on top and spoon over some Hollandaise Sauce and serve immediately  Zoom  .

Notes: Cooking mangetout on the Plancha delivered unexpectedly the best mangetout I have ever had.
