Chicken a la Plancha

A bit of a méli-mélo of Chicken, Chorizos, Potato Cakes and Fresh Chutney but jolly nice

  1. Make fresh chutney  Recipe   and put to one side. Peel potatoes, cut in quarters, cook in boiling water, drain and put back into saucepan. Use some scissors to snip the chives if used and add to potatoes along with two tablespoonfuls of butter, one tablespoonful of cream, a teaspoonful of turmeric if used and mash well with a fork. Season with salt and black pepper.
  2. Put some flour on to a board, form the mashed potato into cakes and dust with flour on both sides. Take a piece of foil and make into a cooking container by folding up the edge. Sprinkle some olive oil in the container.
  3. Cut the chicken breast into two slices. Fold some grease proof paper around the chicken slices and beat to thin escalopes. Sprinkle some fresh lime juice on to both sides of the chicken slices, paint with some olive oil and season with salt and pepper. use a sharp or serrated knife to cut the sausages into slices  Picture  . Paint the sausage pieces with olive oil.
  4. Fire up the plancha. Spray the potato cakes on one side with olive oil. Put the foil container on to the plancha, add the potato cakes oily side down and cook until just golden brown, Spray the potato cakes with olive oil, turn and cook until golden brown  Picture  . Take out and keep warm.
  5. Put the chorizos on to the plancha and quickly brown  Picture  , take out and keep warm. Add the chicken pieces to the plancha and quickly brown on both sides, do not overcook  Picture  .
  6. Put the chicken pieces on to serving plates, sprinkle ove the chorizos, add a potato cake and some fresh chutney and serve  Zoom  .
Serves: Two

Notes: Undoubtedly nicer with uncooked chorizos available from Brindisa  Link  , but you could use slices of cooked chorizos if need be.
