Simple but great dish of Asparagus Sprue griddled on the Plancha, served with a Duck Egg and Parmesan flakes
230gm sprue (skinny asparagus)
Trim the asparagus by cutting off the woody ends of the spears. Put the spears in a bowl with a few tablespoonfuls of olive oil, season with salt and pepper and mix well. Cut some cooking foil into rounds and fold in edges to form containers for cooking the eggs.
Fire up the plancha on a medium heat, put on the asparagus and cook turning from time to time until the asparagus is cooked but still a little al dente Picture . Take off the plancha and keep warm.
Put the egg foil containers on the plancha, spoon on a tablespoonful of olive oil and allow warm for a minute or so. Break in the duck eggs, season with a little salt and cook until whites are firm Picture .
Put the asparagus on to serving plates, put the eggs on top, flake over some parmesan and serve Zoom .
Serves: 2
Notes: There are recipes that use griddled bacon lardons or pieces of proscuitto instead of parmesan but I think it might overwhelm the the flavour of the asparagus.
