Great Plancha dish, the Peppers and Fennel go really well with the Seafood

  1. Top and tail the peppers, cut out the pith and then cut into thin strips. Similarly top and tail the fennel, cut into thin slices and then into strips  Picture  . Stir in a a couple of tablespoonfuls of olive oil and season lightly with salt and pepper.
  2. Peel and wash the prawns, cut the squid into pieces about an inch in width. Paint the prawns, squid and scallopes with olive oil and lightly season with salt and freshly ground white pepper  Picture  .
  3. Put the peppers and fennel on the plancha and quickly cook  Picture   and keep warm. Put seafood on the plancha and quickly cook  Picture  .
  4. Assemble the dish by spooning some vegetables on to the middle od serving dishes, surround with seafood, scatter over some chopped parsley, sprinkle over some good olive oil and serve  Zoom  .
